At Le Terre di Gu we start harvesting in October, by hand and with nets. The olives are immediately processed using only mechanical procedures. Cold extracted and immediately bottled in dark glass in the absence of oxygen, our extra virgin olive oil keeps its superior flavour and organoleptic characteristics intact.

Extra virgin olive oil bio.

Even more excellent in Tenno… obviously organic!

The olive tree, native to the Middle East, has found its ideal habitat in our terraced fields thanks to the mild climate of Lake Garda and the poor, stony and calcareous soils. Here in Tenno we work olive trees up to 500 meters above sea level. We are in one of the northernmost positions, beyond which the olive tree cannot guarantee quality productions.

Our organic oil, with 20% more polyphenols, is the cleanest extra virgin olive oil in Italy, as defined by the Ministry of Agriculture and Forestry. Organic certification is only a detail consequence of the unique cultivation technique adopted in the terraced fields of our ethical and sustainable mountain farm.

Flavour

The aroma is light fruity with a strong character. A very delicate taste comes with a heady scent of almonds, while a rather intense bitter and spicy note closes the finish. The colour is intense to marked green-gold due to the high chlorophyll content.

The characteristics of the oil are typically those of an oil from our area but with something extra. The production method is reflected in a higher average polyphenol content.

Polyphenols are responsible for the organoleptic characteristics of oils, determining the fruity aroma and spicy or bitter taste.
